Passionfruit mousse recipe details
A sweet and rich-flavoured quick recipe for a light fruity mousse that everyone loves. It’s ready in no time.

Ingredients
Serves: 30- 30 egg whites
- 1 quart cream, whipped
- 1/3 cup vanilla extract
- 1 1/2 pounds canned passionfruit pulp
- 2 (15 ounce) cans sweetened condensed milk
- food coloring
- 6 tablespoons gelatin
Preparation method
Prep: 25 mins | Extra time: 2 hours, setting1. In large bowl or stand mixer, whip cream with vanilla extract until cream creates stiff peaks.
2. Combine whipped cream with passionfruit and sweetened condensed milk.
3. In separate bowl, whisk egg whites for 10 minutes or until it too forms stiff peaks.
4. Slowly fold in egg whites to other mixture, then add desired food coloring to give desired effect.
5. Dissolve gelatine in 3/4 cup boiling water, then add to mixture.
6. Quickly combine mixture and pour into martini glasses. Allow to set in the fridge for at least 2 hours.
7. Garnish with a rosette of cream and any leftover passionfruit pulp.
