Ingredients

2 small	courgettes, sliced
1	red bell pepper, sliced
200 g	Feta cheese, diced
	salt and freshly ground black pepper
	olive oil
	Italian herbs
	lemon juice
	long skewers

Instructions

Mix together olive oil and lemon juice and season with Italian herbs, salt and pepper.

Spike onto each skewer in turn courgette, bell pepper and feta cheese. Sprinkle with the marinade and grill or bake until the cheese starts to melt.

Serve with fresh crusty white bread.
