Fried Courgette with Thyme recipe

Ingredients
2 large | courgettes |
1 clove(s) | garlic |
1 tsp | fresh thyme |
5 tbsp | olive oil |
salt and pepper |
Instructions
Clean and lengthwise quarter the courgettes. Cut the quarters at an angle in slices to produce diamond shapes. In a pan, heat the oil, and fry the courgettes together with the roughly chopped thyme and the garlic until slightly browned. Season with salt and pepper.
Serve warm as a side dish or together with fried aubergines and bell peppers as a starter.
Also good, when marinated overnight and served cold the next day.
