Ingredients

25 g butter
2 medium onions, finely chopped
2 stick(s) celery, chopped
230 g bread crumbs
60 ml fresh parsley
2  lemons, grated rind
1 medium egg, beaten
salt and pepper

Instructions

Melt the butter in a large saucepan, add the onions and celery, cover and cook for about 10 minutes, until soft. Sir occasionally.

Remove from the heat and add parsley, breadcrumbs and lemon rind. Season and stir in the egg.

Stuff turkey at the neck end.
