Celeriac soup with cro tons recipe details
Ingredients
1 kg | celeriac, peeled and diced |
salt and freshly ground black pepper | |
200 g | potatoes, peeled and diced |
1 | onion, chopped |
6 sprig(s) | parsley, chopped |
3 slice(s) | white bread, cut into 2cm cubes |
50 g | walnuts, roughly chopped |
4 tbsp | crème fraîche |
1 clove(s) | garlic, chopped |
4 tbsp | oil |
1 l | vegetable stock |
2 tsp | honey |
sugar | |
white wine vinegar |
Instructions
In a saucepan heat 2 tablespoons of oil and stir-fry onions, garlic, potatoes and celeriac for 5-7 minutes. Deglaze with the stock and bring to a boil. Reduce the heat, cover and cook for 20 minutes.In a pan heat the remaining oil. Roast the bread cubes until golden and crispy all around. Add the nuts. Season with salt and pepper. Stir in the honey and the parsley, then set aside.
Purée the soup with a hand blender. Stir in the crème fraîche. Season to taste with salt, pepper, sugar and vinegar.
Ladle the soup into soup bowls and serve sprinkled with croûtons.
