Parma ham wrapped minced meat on fried potatoes recipe details
Ingredients
2 slice(s) | toast |
6 sprig(s) | thyme, chopped |
6 sprig(s) | parsley, chopped |
salt and freshly ground black pepper | |
250 g | beef mince |
1 medium | egg yolk |
3 slice(s) | Parma ham, halved |
2 large | potatoes, peeld and cut into thin slices |
3 tbsp | sour cream |
1 tsp | tomato puree |
2 tsp | oil |
Instructions
Soak the bread in cold water. Mix the minced meat with the squeezed out bread, 2/3 of the herbs, the egg yolk and the tomato purée. Season with salt and pepper. Knead until well combined. Shape into 6 small rolls. Wrap each roll with half a slice of Parma ham.In a pan, heat 1 teaspoon of oil. Fry the potato slices from both sides for 6-8 minutes or until done and golden brown. Season with salt and pepper.
In a second pan, heat 1 teaspoon of oil and fry the rolls all around for 8-10 minutes.
Serve the mince rolls on some fried potatoes each, garnished with a dollop of sour cream and the remaining herbs.
