Parliament cakes recipe details
Ingredients
150 g | plain flour |
75 g | unsalted butter, softened |
75 g | brown sugar |
1 large | egg |
75 g | treacle |
2 tsp | ground ginger |
Instructions
The number produced will depend on the size chosen.Preheat oven to Gas Mark 3, 170°C, 325°F.
Mix the dry ingredients in a bowl.
Melt the butter in a saucepan and add the treacle and bring to a boil while stirring vigorously.
Turn off the heat and add remaining ingredients, mixing vigorously with a wooden spoon. Allow to cool.
When comfortable to handle, scoop up a small quantity with a spoon and use a teaspoon to push it off onto a well greased baking tray. Flatten the biscuits slightly with a fork and leave sufficient around for them to spread.
Cook for 25-30 minutes and allow to cool. Use a palette knife to lift off the biscuits from the tray and store in an airtight container.
