Parliament cakes are a delightful treat that originated in the United Kingdom. Ingredients

150 g plain flour
75 g unsalted butter, softened
75 g brown sugar
1 large egg
75 g treacle
2 tsp ground ginger

Instructions

The number produced will depend on the size chosen.

Preheat oven to Gas Mark 3, 170°C, 325°F.

Mix the dry ingredients in a bowl.

Melt the butter in a saucepan and add the treacle and bring to a boil while stirring vigorously.

Turn off the heat and add remaining ingredients, mixing vigorously with a wooden spoon. Allow to cool.

When comfortable to handle, scoop up a small quantity with a spoon and use a teaspoon to push it off onto a well greased baking tray. Flatten the biscuits slightly with a fork and leave sufficient around for them to spread.

Cook for 25-30 minutes and allow to cool. Use a palette knife to lift off the biscuits from the tray and store in an airtight container.

About the recipe:
Actually a biscuit originally sold to gentry and Members of the Scottish parliament in Edinburgh. They were once made and sold by a major manufacturer.
