Ingredients

2 stalk(s) leek, approx. 600 g
8 large potaotes, waxy
24 slice(s) Parma ham
basil
For the pesto:
200 g rocket
60 g pine nuts
40 g freshly grated Parmesan cheese
250 ml olive oil
some salt and pepper

Instructions

Slice the leek lengthwise in 5-7 cm long stripes. Wash and peel the potatoes and cut them in 5-7 cm long stripes. Cook the potato stripes in salted water for 10 minutes or until done. Drain.

Purée the rocket and the pine nuts. Stir in the Parmesan and olive oil and mix until well combined. Season to taste with salt and pepper.

Place the potato and the leek stripes in a shallow dish, sprinkle with pesto and allow to steep in the fridge for 1 hour.

Spread the Parma ham slices on the kitchen surface, divide on each slice some potato and leek stripes. Roll up and sprinkle with pepper.

Arrange the rolls on a service platter and garnish with basil. Serve with the remaining pesto.
