Ingredients
4 Red Bliss potatoes, scrubbed and microwaved with skins on
2 Tablespoons olive oil
1 Tablespoon (or more) Greek dressing
Finely chopped parsley
Instructions:

Allow potatoes to cool. Pour olive oil and Greek dressing in electric skillet; add finely chopped fresh parsley and chunked potatoes. Cook at 325 degrees until blended and hot. Yum! Would be great at breakfast.
