- 2 Tablespoons olive oil
- 1 Tablespoon (or more) Greek dressing
- Finely chopped parsley
Allow potatoes to cool. Pour olive oil and Greek dressing in electric skillet; add finely chopped fresh parsley and chunked potatoes. Cook at 325 degrees until blended and hot. Yum! Would be great at breakfast.
