Ingredients
Serves: 4- 1 1/2 cups grated large daikon radish
- 1/2 red onion chopped
- 1 clove garlic minced
- 1 egg
- 1/2 cup Italian style breadcrumbs
- 1/2 tsp. Pepper
- 1/2 tsp. Paprika
- Sriracha(R) (chili paste) to taste
- Vegetable oil
- 2 teaspoons salt, or as needed
Preparation method
Prep: 10 mins | Cook: 10 mins | Extra time: 30 mins, chilling1. Grate daikon into a mixing bowl and sprinkle generously with salt (use your judgment here, not too much). Put daikon in fridge for about 30 mins – 1 hour. Take out of the fridge, drain off any water.
2. Mix in onion, garlic, egg, breadcrumbs, pepper, paprika, and Sriracha. Mix until the consistency is such that you can form small roundish patties with the mix.
3. Heat 1/2 inch of vegetable oil in a medium skillet over medium high heat.
4. When the oil is hot (don’t wait until it smokes) place a small patty of daikon mixture in the pan. Fry each patty for about 2 minutes on each side or until it is solid and nicely browned but not burned.
5. Remove from the oil and place on paper towels to soak up excess oil. Once cool enough…eat!
