Ingredients
8 | king prawns, peeled and deveined |
300 g | mussels, cleaned |
600 g | chicken breast or chicken legs, cut in 2-3 pieces each |
½ | rabbit, jointed, optional |
300 g | pork fillet, cut in 4cm cubes |
2 | red bell peppers, diced |
4 large | tomatoes, diced |
2 | onions, chopped |
1 clove(s) | garlic, chopped |
250 g | peas, frozen or fresh |
300 g | white beans, canned |
1 l | chicken stock |
1 pinch(es) | saffron |
300 g | Spanish short grain rice |
2 | lemons, in wedges |
salt and pepper | |

Instructions
Heat some olive oil in a large and wide pan and fry all the meat until golden all around. Add the garlic and the onions and cook until golden too. Add the bell pepper and the tomatoes, the rice and the saffron into the pan and pour over 2/3 of the stock. Cook until nearly soaked up.Add the peas and the white beans. Reduce the heat and season with salt and pepper. When the liquid is completely soaked up, add in by and by more stock. After 15 minutes add the prawns and the mussels. It looks great, if you arrange prawn and mussels in circles. Cover and cook for 5 more minutes. Turn off the heat.
Serve the paella with lemon wedges.
