Ingredients

300 g	prawns, fish, scallops, or mixed seafood
1 tbsp	garlic, chopped
2 tbsp	Thai shallots, cut lengthwise into strips
5	red chilies, chopped
5	spring onions, chopped
50 g	krachai (lesser ginger), cut into thin strips or rings
30 g	green peppercorns
1 tbsp	fish sauce
1 tbsp	oyster sauce
1 tbsp	soy sauce
some	sugar
80 ml	broth or water
1 handful	bai gaprau (Thai holy basil), picked from their stalks
some	vegetable oil

Instructions

Fry prawns or scallops, fish, seafood separately and keep warm.

Heat a wok and add oil. Add garlic and onions and fry some moments, then add krachai, chilies and green peppercorns (leave them on their stems). Stir-fry for a minute and then add some broth, fish sauce, oyster sauce, and soy sauce. Season to taste adding some sugar and some more fish sauce if needed.

Add prawns (or scallops, seafood or fish) as well as spring onions and basil leaves.

Serve on rice.
