Pad cha with prawns scallops seafood or fish recipe details
Ingredients
300 g | prawns, fish, scallops, or mixed seafood |
1 tbsp | garlic, chopped |
2 tbsp | Thai shallots, cut lengthwise into strips |
5 | red chilies, chopped |
5 | spring onions, chopped |
50 g | krachai (lesser ginger), cut into thin strips or rings |
30 g | green peppercorns |
1 tbsp | fish sauce |
1 tbsp | oyster sauce |
1 tbsp | soy sauce |
some | sugar |
80 ml | broth or water |
1 handful | bai gaprau (Thai holy basil), picked from their stalks |
some | vegetable oil |
Instructions
Fry prawns or scallops, fish, seafood separately and keep warm.Heat a wok and add oil. Add garlic and onions and fry some moments, then add krachai, chilies and green peppercorns (leave them on their stems). Stir-fry for a minute and then add some broth, fish sauce, oyster sauce, and soy sauce. Season to taste adding some sugar and some more fish sauce if needed.
Add prawns (or scallops, seafood or fish) as well as spring onions and basil leaves.
Serve on rice.
