Oxtail soup recipe details
Ingredients
1 kg | oxtail, chopped in approx. 8-10 pieces |
60 g | onion, finely chopped |
600 g | mixed vegetables, sliced, e.g. carrots, leek, parsnip |
60 g | butter |
0.7 l | dry white wine |
200 g | peeled tomatoes |
2 sprig(s) | thyme |
10 | peppercorns |
2 | bay leaves |
1 ½ l | water |
salt | |
150 g | carrot, sliced |
100 g | celery, sliced |
150 g | potatoes, diced |
5 cl | sherry |
1 tbsp | parsley, chopped |
Instructions
In a large saucepan, sauté the onions in hot butter over medium heat until lucent. Remove the onions and set aside.Sauté the oxtail over medium heat until golden brown all around. Add the onions and mixed vegetables and cook for 5 more minutes.
Deglaze with the white wine and cook for 2-3 minutes, stirring constantly. Add the thyme and tomatoes and season with salt. Add the peppercorns and the bay leaves. Pour in the water, bring to the boil and simmer over low heat for 3 hours. Take out the oxtail pieces and allow them to cool for a while, then remove the meat from the bones. Cut the meat in bite-sized pieces and return them into the soup.
In a saucepan, cover the carrot, celery and potatoes with salted water. Bring to a boil and cook over medium heat for 5-10 minutes. Drain the vegetables and add them to the soup.
Stir in the sherry and simmer for 5 more minutes. Remove the thyme and the bay leaves. Check seasoning and correct if necessary. Sprinkle with parsley and serve.
