Chicken soup with red lentils recipe details
Ingredients
400 g | chicken breast fillet |
2 tbsp | olive oil |
1 | leek |
1 clove(s) | garlic |
1 ½ | stock cubes |
100 g | red lentils |
1 | red bell pepper |
fresh root ginger, 2,5cm | |
½ | lemon |
cayenne pepper | |
salt |
Instructions
Cut the chicken breast into stripes and sauté in oil util slightly golden. Wash, clean and finely cut the leek in slices. Peel and press the garlic.In a large saucepan, sauté the leek and the garlic in a little oil until lucent. Add 1 l of water and the stock cubes and bring to the boil. Stir in the lentils and cook for 25 minutes.
Wash, seed and dice the bell pepper. Add to the soup and cook for further 5 minutes. Add the chicken breast stripes. Peel and grate the ginger, stir into the soup and simmer for another 2 minutes.
Season to taste with lemon juice, salt and cayenne pepper and serve.
