Aubergine Salad recipe
|3 clove(s)||garlic, minced|
|juice of 1 lemon|
|salt and pepper, to taste|
Prick the aubergines with a fork and bake them at 200°C for about 10 minutes or until soft. Take out from oven and leave to cool them. When cooled, peel them carefully.
Chop the aubergines and put them in a blender. Process until smooth.
Gradually add the onion, garlic, parsley and lemon juice into the blender and continue to process until the mixture is smooth. Add salt and pepper if desired or necessary.
