Overly stuffed baked potatoes recipe details
This has become a budget minded favorite for my wife and I. This can act as a whole meal on its own or a very filling side dish for your favorite meat course.

Ingredients
Serves: 4- 2 large baking potatoes
- 1 can Green Giant(R) Mexicorn
- 1 pint sour cream
- 1 (3 ounce) package crumbled bacon (not fake)
- 1 spring onion, chopped
- grated cheese, Cheddar or your choice
Preparation method
Prep: 1 hour | Cook: 45 mins1. Poke a couple of holes in the potatoes with a fork and microwave on High until tender, about 15 minutes. Allow to cool.
2. Preheat oven to 400 degrees F (200 degrees C).
3. Slice the potatoes lengthwise and scoop out some of the flesh, saving it in a bowl. Place the skins onto a flat cooking sheet covered with foil. Mash the flesh combining a couple of large dollops of sour cream, the Mexicorn, crumbled bacon and chopped spring onion. Spoon the mixture back into the potato skins.
4. Bake in the preheated oven for 25 minutes. Remove from oven and sprinkle generously with the cheese. Return to oven for five minutes or until cheese is melted. Remove and serve.
