Oven roasted winter vegetables recipe details
Ingredients
3 medium | onions, cut into wedges |
4 | potatoes, peeled, halved |
250 g | brussels sprout |
2 medium | carrots, peeled, sliced |
2 tbsp | olive oil |
2 sprig(s) | fresh thyme |
10 leaves | fresh sage |
2 tsp | balsamic vinegar |
8 clove(s) | garlic, peeled, halved |
salt and pepper, to taste |
Instructions
Combine all ingredients in a large bowl, toss well. Set aside for 1 hour.Preheat oven to 200°C and pour some more olive oil into a large, shallow baking pan. Add the marinated vegetables to the pan and roast them for about an hour, turning several times during cooking.
Add garlic after 30 minutes of cooking. Vegetables are done when they can easily be pierced with a knife or fork.
