Ingredients

3 medium onions, cut into wedges
4  potatoes, peeled, halved
250 g brussels sprout
2 medium carrots, peeled, sliced
2 tbsp olive oil
2 sprig(s) fresh thyme
10 leaves fresh sage
2 tsp balsamic vinegar
8 clove(s) garlic, peeled, halved
salt and pepper, to taste

Instructions

Combine all ingredients in a large bowl, toss well. Set aside for 1 hour.

Preheat oven to 200°C and pour some more olive oil into a large, shallow baking pan. Add the marinated vegetables to the pan and roast them for about an hour, turning several times during cooking.

Add garlic after 30 minutes of cooking. Vegetables are done when they can easily be pierced with a knife or fork.
