Oven roasted vegetables recipe details
Ingredients
2 | red bell peppers, washed, seeded, sliced |
1 | green bell pepper, washed, seeded, sliced |
2 | onions, sliced |
2 | zucchini, sliced |
250 g | mushrooms, halved |
6 | potatoes, peeled, sliced, parboiled |
1 tsp | salt |
2 clove(s) | garlic, minced |
½ tsp | oregano |
½ tbsp | basil |
½ tsp | rosemary |
Instructions
Preheat oven to 200°C.Arrange vegetables in a baking dish or roasting pan in a single layer.
Combine minced garlic, salt and oil. Drizzle the vegetables with the oil mixture and toss to coat well.
Sprinkle with pepper, oregano, basil and rosemary.
Place vegetables in the oven and roast for 20 minutes. Check and reduce heat if vegetables are browning too. Continue to cook the and add more olive oil if the vegetables absorb the oil and become dry during the cooking. Check again after 20 minutes to see whether all vegetables are tender.
