Ingredients

½ | lemon, juice and rind |
25 g | butter |
25 g | flour |
200 ml | vegetable stock |
300 ml | milk |
salt and pepper | |
300 g | zucchini |
250 g | sausage meat |
1 tsp | fresh thyme |
16 | cannelloni, approx. |
200 g | tomatoes, chunky, canned |
30 g | freshly grated Parmesan cheese |
Instructions
Preheat the oven to 180°C.Dice the onion. Heat butter in a saucepan and sauté the onions, add the flour and cook until bright yellow. Pour in the vegetable stock and the milk. Whisk with a wire whisk to avoid lumps. Season with salt, pepper and grated lemon peel. Bring to the boil and simmer over low heat for 3 minutes. Stir in the lemon juice. Adjust with the condiments, if necessary.
Wash the zucchini, trim the edges and grate the Zucchini. Place into a bowl. Add the sausage meat and the thyme and knead until well combined. Season with pepper. Fill the mixture into a piping bag with a large nozzle and extrude into the cannelloni. Place the cannelloni side by side in a large, slightly greased casserole dish. Divide the chunky tomatoes on top and pour in the sauce. Sprinkle with Parmesan cheese. Bake for 45-50 minutes.
Remove from the oven, allow to rest for 5 minutes, then serve.
