Ingredients

3 bulb(s) fennel, cut in stripes
2  bell peppers, yellow and red, diced
4  onions, cut in stripes
4 tbsp extra virgin olive oil
3 sprig(s) thyme, chopped leaves
salt and freshly ground black pepper, to taste
cayenne pepper, to taste

Instructions

Divide all vegetables in a large shallow casserole dish, drizzle with the olive oil and season with salt, pepper and cayenne pepper. Mix thoroughly.

Place into the oven at 200°C for 25 minutes, then stir and turn over a little with a large fork and bake for another 20 minutes or until the vegetables are slightly brown.

Serve hot or lukewarm as a side dish with fish or lamb or as a vegetarian main dish with white bread.
