Ingredients
4 head(s) | chicory |
1 bunch(es) | watercress, rinsed and dried, leaves only |
3 large | oranges, peeled and sliced into rounds |
125 ml | fresh mayonnaise, see recipe in database |
2 tbsp | Dijon mustard |
125 ml | double cream |
salt and fresh ground pepper, to taste |
Instructions
Chicory in the UK is also known as endive in some countries, and refers to the yellow-green variety. A purple-red or sometimes red with green stalks form is known as radicchio, a little more bitter, may be used alone or in combination, although it is larger and you would probably need 1 small to medium or about half of a larger one.Remove the leaves from the chicory until the centre is reached. Slice the centre vertically into two. Layer the leaves in a salad bowl alternating with orange slices, and finish with orange slices.
Shortly before serving, mix the mustard and mayonnaise together with a whisk in a jug or bowl. Slowly add the cream beating well and season to taste. Add to salad and toss together at the table and serve.
