Ouray breakfast burrito recipe

- 1/2 cup diced fresh tomatoes
- 1/3 cup chopped chiles
- 3 Tablespoons butter
- 1 small onion, minced
- 1/2 teaspoon ground cumin
- 1 Tablespoon flour
- 1/2 cup sour cream
- 1-1/2 cups shredded Jack cheese
- 1-1/2 cups shredded cheddar cheese
- 6 eggs, beaten
Mix together tomatoes and chiles in a small bowl and place in a warm oven. Melt butter in a large frying pan and add onion and cumin. Cook until onion is limp, then add flour; cook until bubbly. Blend in sour cream thoroughly; continue cooking. Add cheese and cook until melted. Stir in eggs and cook until creamy.
Fill 6 warm tortillas. Garnish with sour cream, tomato mixture, and guacamole.
