Orange winter squash mash recipe details
Ingredients
800 g | winter squash, baked |
1 tbsp | grated orange peel |
90 ml | freshly squeezed orange juice |
2 tbsp | butter |
3 tbsp | single cream |
2 tbsp | honey |
salt and pepper, to taste | |
1 dash(es) | nutmeg, ground |
Instructions
Wash squash and make a slit in the squash to let the steam escape during cooking. Preheat oven to 180°C and bake for 1-1.5 hours or until inside is soft. Cut in half and remove seeds and stringy parts. Scoop out some of the cooked squash and mash it.Add remaining ingredients to the mash. Season to taste with salt, pepper and nutmeg and stir until butter melts. Serve.
