Ingredients
2 cups all-purpose flour
1/4 cup sugar
1 Tablespoon baking powder
1/2 teaspoon salt
1 Tablespoon orange rind
1/2 cup of coconut or walnuts (optional)
1 egg
1/4 cup melted butter
1 teaspoon orange oil
1 cup milk
1/4 cup melted butter
3 Tablespoons sugar
Instructions:

Preheat oven at 375 degrees. Sift flour with sugar, baking powder, and salt. Mix in orange rind and coconut. Make a well in the center. In another bowl, beat egg with butter and orange oil; stir into milk. Pour into well, and mix only to moisten all ingredients — about 12 to 15 strokes. Batter will look lumpy. Line muffin tin with baking cup liners, and fill about 2/3 full with batter. Bake 15 to 20 minutes at 375 degrees. Let cool about 15 minutes, then dip each muffin in melted butter, then sugar.

Makes about 12 muffins.
