Orange and fennel dressing recipe details
Ingredients
1 tsp | fennel seeds |
550 ml | orange juice |
1 bulb(s) | fennel, halved, cored and thinly sliced |
8 | suffron threads, crushed |
1 tsp | arrowroot |
2 tbsp | olive oil |
2 tbsp | fresh lemon juice |
2 tsp | Dijon mustard |
2 tsp | fresh basil, minced |
salt and pepper, to taste |
Instructions
Toast the fennel seeds in a pan over high heat, about 2 minutes. Add the orange juice, sliced fennel and saffron and bring to a boil. Lower the heat and bring to a simmer. Cook until the juice has reduced to about 250ml. Strain the juice into a bowl Reserve the fennel. Return the juice to the saucepan and bring to a simmer over medium heat.In a small bowl, mix the arrowroot with 2 tablespoons of water, then whisk into the juice and cook just until thickened.
Remove pan from heat, stir in the cooked fennel and leave to cool at room temperature.
Strain the mixture into a medium bowl and whisk in the olive oil, lemon juice and mustard. Season the dressing with salt and white pepper.
Stir in the basil just before serving.
