Ingredients

1 cup(s) dried chickpeas, soaked in water the night before
1.2 kg pork spare ribs
oil
1 tbsp garlic
1 tbsp chilies
1 tbsp coriander seeds
1 tbsp ginger
1 tbsp tomato puree
1  onion, big one, chopped
½  radish, white, cubed or sliced
salt
2  potatoes, big ones, cut into bite-sized pieces
1 bunch(es) Asian celery, chopped

Instructions

Heat oil in a big pot and roast ribs.

In a mortar, grind coriander seeds, garlic, chilies and ginger, add to the ribs. Fry briefly, add onions and tomato purée and sauté for some minutes.

Add chickpeas, radish, some water and salt and cook for about 1 hour. Add potatoes, chopped celery stalks and more water, if necessary, and cook until the potatoes are done (about 25 minutes). Add chopped celery leaves, season to taste with salt and serve.
