Ingredients

2  spring onions, sliced
½ bunch(es) parsley, chopped
8  eggs
4 tbsp milk
salt and freshly ground black pepper
nutmeg
4 tsp butter
1 tbsp oil
35 g bacon, diced
800 g chanterelles, cleaned, larger ones halved or quartered
300 g single cream

Instructions

In a saucepan, heat the oil. Fry the bacon until crispy. Remove from the pan and set aside. Add the chanterelles into the pan and cook for 3-4 minutes. Return the bacon and add the spring onions. Add the cream and bring to a boil. Cook until slightly thickened. Season to taste with salt and pepper.

Whisk the eggs with the milk. Season with salt, pepper and nutmeg.

In a pan, heat 1 teaspoon of butter. Pour in ╝ of the egg mixture. Cook over medium heat until nearly set, then turn over gently and cook for some more seconds. Place ╝ of the chanterelles filling onto the omelette and fold over. Slide from the pan onto a warmed plate. Repeat the procedure 3 more times and serve immediately.
