Omelette with bacon and chanterelles recipe details
Ingredients
2 | spring onions, sliced |
½ bunch(es) | parsley, chopped |
8 | eggs |
4 tbsp | milk |
salt and freshly ground black pepper | |
nutmeg | |
4 tsp | butter |
1 tbsp | oil |
35 g | bacon, diced |
800 g | chanterelles, cleaned, larger ones halved or quartered |
300 g | single cream |
Instructions
In a saucepan, heat the oil. Fry the bacon until crispy. Remove from the pan and set aside. Add the chanterelles into the pan and cook for 3-4 minutes. Return the bacon and add the spring onions. Add the cream and bring to a boil. Cook until slightly thickened. Season to taste with salt and pepper.Whisk the eggs with the milk. Season with salt, pepper and nutmeg.
In a pan, heat 1 teaspoon of butter. Pour in ╝ of the egg mixture. Cook over medium heat until nearly set, then turn over gently and cook for some more seconds. Place ╝ of the chanterelles filling onto the omelette and fold over. Slide from the pan onto a warmed plate. Repeat the procedure 3 more times and serve immediately.
