Ingredients

400 g chanterelles, sliced
4 tbsp oilve oil
2 tbsp sugar
100 ml medium dry sherry
1 ½ l vegetable stock, just lightly salted
pepper

Instructions

Sauté the chanterelles slightly in the olive oil, glaze with the sugar then deglaze with sherry and cook for a minute.

Pour in the vegetable stock and cook over medium heat until the soup is reduced to approximately 1 liter.

Before serving, season the soup to taste with some more sherry, sugar, pepper and perhaps salt.
