Chanterelle soup recipe details
Ingredients
400 g | chanterelles, sliced |
4 tbsp | oilve oil |
2 tbsp | sugar |
100 ml | medium dry sherry |
1 ½ l | vegetable stock, just lightly salted |
pepper |
Instructions
Sauté the chanterelles slightly in the olive oil, glaze with the sugar then deglaze with sherry and cook for a minute.Pour in the vegetable stock and cook over medium heat until the soup is reduced to approximately 1 liter.
Before serving, season the soup to taste with some more sherry, sugar, pepper and perhaps salt.
