Norwegian berry pudding recipe details
Ingredients
450 g | raspberries, blueberries or strawberries or a mixture of all three |
1 tbsp | sugar |
500 ml | cold water |
2 tbsp | cornflour |
Instructions
Wash and clean the fruit. Drain excess water. Reserve 4 large berries for decoration.Place fruit, sugar and water in a pan. Cook over low heat for 5 minutes or until the fruit is soft.
Remove from heat and allow to cool. Press berries through a sieve into a bowl. Discard all residues remaining in the sieve.
Place cornstarch in a cup or small bowl and add a tablespoon of juice from the berries. Mix until smooth and no dry powder or lumps remain. Add this liquid to the fruit juices. Return to a pan and bring to a boil.
Reduce heat to low and cook for 5 minutes, stirring constantly with a spoon.
Pour the pudding into glasses and chill in refrigerator. Serve chilled topped with a fresh berry on top.
Options:
Use currants, cranberries or blackberries if wished but you will need to add additional sugar to counter their inherent tartness.
