Ingredients
7 leaves | gelatine |
2 ½ ounce(s) | sugar |
1 | navel orange, for the pulp |
1 | navel orange, juiced (2 fluid ounces) |
½ | lemon, juiced |
1 | egg white |
5 fluid ounce(s) | double cream |
1 fluid ounce(s) | cointreau or Grand Marnier |
Instructions
To Make a 1 pint basin:Beat the cream to soft peak stage – reserve in the fridge.
Pare the peel and pith off the oranges and cut the fruit into quarters. Remove the central pith and place the fruit in a blender. Process until liquid. Pour into a measuring jug and add the sugar, liqueur, lemon juice and add orange juice to make up to 8 fluid ounzes, just under ½ pint. Stir until the sugar has dissolved and keep cool.
Soak the gelatine in cold water, until soft, squeeze dry by hand and place into a bowl, large enough to mix everything together. Place the bowl in the microwave and cook for 10 – 20 seconds on high, until the gelatine has completely melted. Very rapidly, beat in the orange juice and pulp mixture, so that the gelatine is evenly dissolved. It will start to set quite quickly so immediately scrape the egg white into the mixture and stir in, quickly followed by the whipped cream. Continue to stir until mixed in without losing too much of the air .
Pour into a one pint bowl – it should just fill it to the rim. Place in the fridge and chill until set.
When ready to serve, run a palette knife round the edge of the bowl. cover with a plate and turn upside down – the set mixture should settle onto the plate.
For the Nell Gwynn effect:
Make a double quantity and repeat with a second bowl and arrange side by side on an appropriately sized plate. Decorate with sliced oranges and if you feel really naughty, decorate with a hazel nut on top of each pudding surrounded by a small sprinkle of chocolate vermicelli – not for sensitive company! Got a laugh at our Pudding Club, however!
