Nectarines poached in rose and ginger recipe details
- Ingredients
- 2 cups Rose or fruit wine
- 2 cups sugar
- 2 cups water
- 4-inch piece of ginger root, sliced
- 6 nectarines, halved and pits removed
- 1 teaspoon almond flavoring
- crème frâiche or sour cream
- candied ginger
In saucepan, place wine, sugar, water, and ginger. Bring to a boil and simmer for about 20 minutes. Add nectarines and simmer on low heat until fruit is tender, about 2 to 3 minutes. Remove from heat and add almond flavoring. With slotted spoon, remove nectarines from liquid and cool on wire rack.
Serve at room temperature with a little of the liquid. Garnish with crème frâiche and a few slivers of candied ginger and a sprig of mint.
