Ingredients
4 | chicken breasts, boneless |
3 tbsp | olive oil |
For dip 1: | |
1 medium | egg |
2 tbsp | water |
For dip 2: | |
2 tbsp | cornstarch |
1 tsp | dried thyme |
1 tsp | paprika |
½ tsp | salt |
½ tsp | cayenne pepper |
For the mustard sauce: | |
240 ml | mayonnaise |
2 tbsp | Dijon mustard |
½ tsp | white wine vinegar |
½ tsp | sugar |
2 tbsp | fresh parsley, chopped |
2 tbsp | cornstarch |
salt, to taste |
Instructions
Whisk together the egg and the water in a small bowl. Set aside. In a blender combine the cornstarch, thyme, paprika, salt and cayenne. Set aside.
Preparing the chicken:
Dip each chicken breast into the egg mixture and then into the paprika mixture.
Heat the oil in a frying pan over low heat. Add the chicken to the pan and cook for 3-5 minutes. Turn and continue cooking until the chicken is golden brown and cooked through.
Mustard Sauce:
In a small bowl, combine the mayonnaise, mustard, vinegar, sugar, parsley, and some salt. Serve the chicken with the mustard dipping sauce.
