Instructions
Basic rule with mussels: when they are uncooked throw away any open mussels, when they are cooked throw away any that stay closed.Rinse and clean the mussels under the tap. Discard any open mussels.
Melt the butter in a pan large enough to hold the mussels. Add some oil and mix in the leeks and garlic. Fry on a medium heat for 5 minutes.
Reduce heat and add two thirds of the parsley to the pan and stir for about a minute
Pour in the wine, season with salt and pepper and the stock. Now bring to the boil.
When the mixture starts to bubble, place the mussels in the pan and cover for two minutes. Then stir and cook, covered, for a further three minutes.
Serve straight from the pan into large bowl. Use remaining parsley for garnish.
