Mushroom fried rice recipe details
A great recipe mimicking even the greatest Chinese take-out!

Ingredients
Serves: 4- 1 cup chicken broth
- 1 cup Minute(R) Rice
- 1 teaspoon olive oil
- 3-4 mushrooms
- 1 tablespoon butter
- 1 egg
- 2 green onions, chopped
- 1 to 1 and 1/2 tablespoons soy sauce
Preparation method
Prep: 5 mins | Cook: 10 mins1. Boil chicken broth in small saucepan and remove from heat. Add Minute Rice and let stand for 5 minutes.
2. Meanwhile, heat olive oil in medium sized frying pan or wok over medium-low heat.
3. Cut up mushrooms and place in small bowl with butter. Cook in microwave for 2 minutes. Drain.
4. In a separate bowl, beat egg.
5. When rice is ready, add egg to frying pan and cook for 20 seconds, or until egg appears to be half-cooked.
6. Add rice, mushrooms, onion and soy sauce to frying pan.
7. Stir fry for 8-10 minutes.
