Ingredients

2  shallots, sliced
2 tbsp soft butter
8 sprig(s) fresh rosemary
250 g mushrooms, sliced
1 ½ l chicken stock
250 ml single cream
salt and freshly ground black pepper
sugar
2  chicken breast fillets, cut in 2cm cubes
2 tbsp lard

Instructions

Sauté the shallots in butter. Stir in the mushrooms and half of the rosemary. Cook over medium heat for 10 minutes. Pour in the stock and bring to a boil. Remove from the heat, cover and allow to stand for 1 hour.

Pour the soup through a sieve and set the mushrooms aside. Reheat the soup again. Pour in the cream and bring to a boil. Season to taste with salt, pepper and sugar. Simmer over low heat for 10 minutes.

In a saucepan, melt the lard. Add the chicken breast and the remaining rosemary. Stir-fry until golden. Season with salt and pepper.

Add the chicken and the mushrooms to the soup and serve immediately.
