Mushroom and chicken soup recipe details
Ingredients
2 | shallots, sliced |
2 tbsp | soft butter |
8 sprig(s) | fresh rosemary |
250 g | mushrooms, sliced |
1 ½ l | chicken stock |
250 ml | single cream |
salt and freshly ground black pepper | |
sugar | |
2 | chicken breast fillets, cut in 2cm cubes |
2 tbsp | lard |
Instructions
Sauté the shallots in butter. Stir in the mushrooms and half of the rosemary. Cook over medium heat for 10 minutes. Pour in the stock and bring to a boil. Remove from the heat, cover and allow to stand for 1 hour.Pour the soup through a sieve and set the mushrooms aside. Reheat the soup again. Pour in the cream and bring to a boil. Season to taste with salt, pepper and sugar. Simmer over low heat for 10 minutes.
In a saucepan, melt the lard. Add the chicken breast and the remaining rosemary. Stir-fry until golden. Season with salt and pepper.
Add the chicken and the mushrooms to the soup and serve immediately.
