High on the hog kentucky sliders recipe details
These are little bacon cheeseburgers with the bacon built right in. They are served on a dinner roll or a small hamburger bun with pepper jack cheese, caramelized onions and homemade BBQ sauce.
Ready in: 1 hour
Ingredients
Serves: 4- 1 cup ketchup
- 1/4 cup water
- 1/4 cup balsalmic vinegar
- 1/4 cup brown sugar
- 6 tbs olive oil
- 2 tbs paprika
- 1 tbs ground chipoltle
- 2 cloves finely minced garlic
- 1 ts cayenne
- 1 lb ground beef
- 3 strips thick bacon
- 1 onion
- 12 dinner rolls/ small hamburger buns
- 6 slices pepper jack cheese
- 1 tbs salt
- 1 tbs fresh ground black peper
Preparation method
Prep: 15 mins | Cook: 30 mins | Extra time: 15 mins1. Chop bacon in small quarter inch pieces.
2. Throw in a bowl with the ground beef, mix with your hands.
3. Make 12 small patties, add salt and freshly ground black pepper. Place on grill or large skillet at medium heat for 20 to 30 minutes. (Must cook well to get bacon done.)
4. While sliders are cooking, thinly slice an onion in circles, then cut the circles in half and break apart. Cook onions in 1/2 of the oil in a skillet until they caramelize, then set aside.
5. Now we make the bbq sauce. In same skillet, add the rest of the oil and saute the garlic until just starting to brown. Then stir in: ketchup, water, vinegar, brown sugar, paprika, chipotle pepper, cayenne. Simmer for 10-15 minutes.
6. Take dinner rolls and slice them in half, spread the bbq sauce on the rolls then add the onions.
7. When burgers are almost done, break cheese in half and put on burgers. They are so small that it only takes half a slice. When they melt, place on bun. Serve hot.Alternate method
When in a hurry, use store-bought bbq sauce.
