Hollandaise sauce recipe details
The star of one of the first French cookbooks, this tricky sauce is also the star of eggs benedict. Perfect it at home and never stand in line for brunch again.

Ingredients
Makes: 1 cup- 2 egg yolks
- 1/4 teaspoon salt
- 1 tablespoon lemon juice
- 1/2 cup clarified butter (see footnote), melted and cooled slightly
- 1/4 teaspoon white pepper
Preparation method
Prep: 5 mins | Cook: 5 mins1. Beat egg yolks with salt, lemon juice, and 2 tablespoons of water in a small saucepan. Set over medium-high heat and stir while the mixture comes to a boil.
2. As soon as the sauce comes to a boil, turn off the heat, but keep stirring. Add butter one spoonful at a time. Serve over eggs or toast.
