Mulligatawny soup recipe details
Ingredients
1 medium | eating apple, peeled, cored and diced |
1 medium | carrot, finely chopped |
2 medium | parsnips, finely chopped |
1 medium | onion, chopped |
1 | sunflower oil |
1 tsp | cornflour, mixed in a little cold water |
1 tsp | curry paste |
470 ml | stock |
2 tsp | mango chutney |
30 g | sultanas |
1 pinch(es) | sugar |
juice of 1/2 a lemon | |
salt and pepper | |
1 tsp | ground cumin |
1 tsp | ground coriander |
Instructions
Dice all the vegetables and the apple and lightly fry in the sunflower oil until softening.In the meantime, make up the stock and stir in the curry paste and the lemon juice. Sprinkle the corander and cumin over the vegetable and apple mixture and stir in. Add the stock and the cornflour in water. Add the sugar, chutney and the sultanas. Bring to the boil and simmer for one hour.
Blitz with a blender and reheat.
Add extra seasoning lemon juice and or sugar and serve, garnished with coriander leaf or flat parsley.
