Moroccan coconut orange torte recipe details
Ingredients
6 medium | eggs, separated |
225 g | sugar |
125 g | walnuts or pecans, chopped |
150 g | shredded or dessicated coconut, unsweetened |
125 ml | freshly squeezed orange juice |
60 ml | Kahlua, Cointreau or similar liqueur |
400 g | strawberries, hulled or raspberries to serve |
Instructions
Preheat oven to Gas Mark 3, 170°C, 325°F.Grease a 9-inch, 22cm springform cake tin.
In a clean bowl whisk the egg whites until soft peaks appear. Add about half the sugar and beat until stiff peaks appear. Set aside.
In a medium bowl, whisk the yolks with the remaining sugar until light and fluffy. Add the nuts and coconut and combine by folding together gently. Gently fold in the egg whites.
Spoon mixture into tin and bake for 45 minutes or until lightly browned on top. Remove from oven and cool in pan for about 10 minutes.
Mix the orange juice and liqueur together and pour over the surface of the torte while still in the tin. Allow to cool completely and chill in refrigerator until required. Decorate with berries, slice and serve.
About this recipe:
I was given this about 25 years ago by a Moroccan-born Israeli colleague. He used a orange liqueur called Sabra, apparently Israeli but available in the US and a few other places (but perhaps not in the UK) and said to be similar to Kahlua. Cointreau or other similar liqueurs could also be used.
