Orange Custard Sauce recipe

|190 g||granulated sugar|
|1||orange, grated zest|
|3 tbsp||fresh lemon juice|
|120 ml||orange juice|
|3 medium||eggs, yolks only|
|240 ml||whipping cream|
Combine the granulated sugar, flour, and salt in a heavy saucepan,
Add orange zest, lemon and orange juices and egg yolks and blend well.
Cook over low heat, whilst stirring, until thickened.
Stir in butter, stir until combined and smooth. Remove from heat and cool.
Whip the cream and fold into the cooled orange mixture.
