Ingredients
6 large | tomatoes |
1 large | brown onion |
½ cup(s) | grated cheese, e.g. Cheddar cheese |
1 tsp | mixed herbs |
1 large | egg |
2 scoop(s) | cream cheese |
½ tsp | salt |
½ tsp | black pepper |
oil |
Instructions
Skin the tomatoes by cutting a cross on top and plunging into boiling water for 1 minute then into cold water. The skin will just fall off. Chop the tomatoes and finely chop the onion. Heat oil and sauté the onions until lucent. Add the tomatoes and cook for approximately 6 minutes. Thoroughly mix in the cheese, herbs, salt and pepper. Quickly stir in the raw egg. Take from heat.You can just use as is for sandwiches or add the cream cheese for a dip. I make it for our happy hours. Even the kids love it. This was my mothers favourite to make for us when we were at school.
