Mocha tartlets recipe details
Ingredients
125 g | flour |
100 g | butter |
30 g | ground almonds |
30 g | icing sugar |
300 g | whipping cream |
300 g | dark chocolate |
2 tsp | espresso powder |
2 tbsp | coffee liqueur |
75 g | almonds |
75 g | sugar |
some | cocoa powder |
some | butter |
Instructions
Combine the flour, butter, ground almonds and the icing sugar. Knead until smooth and pliable. Wrap into foil and allow to cool for 30 minutes.Roll out the dough. Cut out 8 discs and line with the pastry 8 buttered tartlet tins. Cool for 30 minutes.
Preheat the oven to 175°C. Bake the pastry cases for 20 minutes.
Bring the cream to a boil. Remove from the heat. Add the chocolate and stir until melted. Stir in the espresso powder and the liqueur. Fill the cream mixture into the pastry cases and allow to cool for 30 minutes.
Roast the almonds. Remove from the pan and set aside. Add the sugar into the pan and cook until caramelised. Add the roasted almonds and stir until well coated. Arrange the caramelised almonds on baking paper and allow to cool, then chop the almonds.
Serve the mocha tartlets sprinkled with the chopped almonds and cocoa powder.
