Onion and gorgonzola frittata recipe details
Ingredients
1 tbsp | butter |
1 tbsp | olive oil |
3 medium | onions, chopped |
8 medium | eggs |
180 ml | milk |
90 g | Gorgonzola cheese, crumbled |
2 medium | potatoes, peeled, diced |
salt and pepper, to taste |
Instructions
In a large skillet heat the butter and olive oil over medium heat. Add the onions and potatoes to the pan and stir. Cook for 15-20 minutes. You may need to add a bit of water in order not to burn the onions.Combine the eggs, milk, and pepper in a bowl and mix until frothy. Pour the egg mixture over onions and potatoes and cover. Cook for 5-6 minutes or until it is almost set.
Sprinkle the cheese over the frittata and cook for a further 2 minutes or until set.
