Mocha biscuits recipe details
Ingredients
100 g | mocha chocolate |
250 g | couverture, semi dark |
6 | eggs |
300 g | sugar |
2 tsp | instant espresso powder |
12 ml | vanilla extract, liquid |
1 pinch(es) | salt |
250 ml | oil |
3 tbsp | coffee liqueur |
150 g | all-purpose flour |
25 g | cocoa powder |
200 g | hazelnut, ground |
2 tsp | baking powder |
4 tbsp | icing sugar |
For the topping: | |
2 | egg whites, beaten |
125 g | sugar |
cocoa powder |
Instructions
Chop the chocolate and couverture into uniform pieces to ensure even melting. Melt slowly over low heat.Preheat the oven to 180°C.
Whisk the eggs with sugar, espresso powder, vanilla extract and salt in a bowl. Stir in the oil and coffee liqueur. Sieve the flour and add with the cocoa, nuts and baking powder into the egg mixture. Then fold in the melted chocolate.
Fill the dough into an icing bag and divide it into paper candy cups.
Whisk the egg whites and then slowly add the sugar. Top the dough with the egg white and sugar mixture.
Bake for 15 minutes.
Allow the biscuits to cool and then dust with cocoa.
Store in an airtight container.
