Mixed vegetable curry recipe details
Ingredients
400 g | cauliflower, in florets |
4 | carrots, sliced |
600 g | potatoes, peeled and cut into 3cm cubes |
200 g | snow peas |
1 | red hot chili pepper, seeded and chopped |
3 tsp | curry paste |
1 can(s) | coconut milk |
soy sauce | |
2 clove(s) | garlic, chopped |
Instructions
Cook the potatoes in salted water for 10 minutes. Add the carrots and the cauliflower and cook for 5 more minutes. Drain the vegetables and keep some of the cooking water.In a saucepan, sauté garlic and chili briefly in hot oil. Add the curry paste and cook stirring for a minute. Deglaze with the coconut milk and a little of the cooking water. Bring to a boil. Add the cooked vegetables and the snow peas and cook for 2 minutes more. Season to taste with soy sauce.
