Mixed fennel salad recipe details
Ingredients
3 bulb(s) | fennel, thinly sliced |
1 | onion, thinly sliced |
½ clove(s) | garlic |
1 | red bell pepper, sliced |
1 large | tomato, sliced |
1 | apple, sliced |
salt and pepper, to taste | |
1 tsp | sugar |
1 tbsp | lemon juice |
5 tbsp | oil |
3 tbsp | single cream |
1 tsp | mustard |
½ tsp | instant vegetable stock |
Instructions
Rub the salad bowl with the half garlic clove. Place the fennel, onions, bell peppers, tomatoes and apple slices into the bowl.Mix together the lemon juice and the sugar. Pour in the oil and whisk until creamy. Mix in the single cream and the mustard until well combined. Season to taste with the instant stock, salt and pepper.
Pour the dressing over the salad, toss and serve.
