Mini walnut muffins details
- Ingredients
- 4 eggs
- 2 cups brown sugar
- 1-1/2 cups whole wheat flour
- 1/2 cup chopped walnuts
- 1/2 cup melted butter
- 1/4 teaspoon black walnut flavoring
Whip eggs. Mix sugar and butter together into whipped eggs. Add remaining ingredients and combine until moistened (do not over mix). Spray (vegetable cooking spray) muffin tins well. Fill mini muffin tins 1/2 full. Bake at 350 degrees for 10 minutes. Cool. Sprinkle with powdered sugar.
Yields:approximately 24.
