Ingredients
325 g | couverture |
100 g | walnuts, chopped |
100 g | almonds, chopped |
4 tbsp | sugar |
200 g | sugar |
salt | |
1 sachet | vanilla sugar |
3 medium | eggs |
150 g | flour |
2 tsp | baking powder |
100 g | butter |
Instructions
Chop and melt 175g of the couverture, then allow to cool a bit. Caramelize 4 tablespoons of sugar. Stir in the nuts and roast for 2-3 minutes. Spread the nut mixture onto a piece of baking paper and allow to cool. Chop the brittle.In a bowl, combine 200g of sugar with salt, butter and the vanilla sugar. Stir until creamy. Beat in the eggs. Sift in the flour and the baking powder. Stir in the melted couverture and finally fold in the brittle.
Preheat the oven to 150°C. Pour the batter into 6 buttered and floured tartlet or small cake forms. Bake for 30-40 minutes. Allow to cool for 10 minutes. Turn out of the forms and allow to cool completely. Chop and melt the remaining couverture and coat the mini cakes with the chocolate.
