New England Soft Molasses Cookies recipe

- Ingredients
- 1 cup shortening
- 1 cup sugar
- 1 cup molasses
- 1/2 cup coffee
- 2-1/2 to 4 cups flour
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 1 teaspoon ginger
- 1/2 teaspoon salt
A great way to welcome guests to your inn (or your home) with warm and soft molasses cookies, just like Vince’s mother used to bake!
Mix ingredients in order, using as much flour as you want to adjust the thickness of the cookie. Less flour would be for a thinner cookie, more flour would be for a thicker cookie. (We prefer the thicker cake-like cookies here at Maple Hill Farm.) Drop by spoonfuls onto a baking sheet. Bake at 350 degrees for 5 to 8 minutes. Dates, raisins, and nuts are optional.
