Ingredients

1 bunch(es) parsley, chopped
½  lemon, juice and grated peel
500 g sweetheart cabbage, shredded
1 bunch(es) celery, diced
200 g fresh green beans, trimmed and cut into 3cm pieces
200 g carrots, peeled and sliced
250 g Italian sausage, cut into 2cm cubes
150 g small pasta
200 g cherry tomatoes, halved
salt and freshly ground black pepper
1 bunch(es) spring onions, sliced
60 g freshly grated Parmesan cheese
1 clove(s) garlic, minced
3 tbsp olive oil
2 l water

Instructions

Mix together the lemon zest, parsley, garlic and 2 tablespoons of oil. Set aside.

In a large saucepan, melt 1 tablespoon of oil and fry the sausage and until slightly crispy. Add the vegetables and cook stirring for 3-4 minutes.

Pour in the water and bring to a boil. Add the tomatoes, the spring onions and the pasta and cook until the pasta is al dente. Season to taste with salt and pepper.

Ladle the soup into soup bowls, top with a spoonful of the parsley mixture and sprinkle with Parmesan cheese.
