Minestrone with italian sausage recipe details
Ingredients
1 bunch(es) | parsley, chopped |
½ | lemon, juice and grated peel |
500 g | sweetheart cabbage, shredded |
1 bunch(es) | celery, diced |
200 g | fresh green beans, trimmed and cut into 3cm pieces |
200 g | carrots, peeled and sliced |
250 g | Italian sausage, cut into 2cm cubes |
150 g | small pasta |
200 g | cherry tomatoes, halved |
salt and freshly ground black pepper | |
1 bunch(es) | spring onions, sliced |
60 g | freshly grated Parmesan cheese |
1 clove(s) | garlic, minced |
3 tbsp | olive oil |
2 l | water |
Instructions
Mix together the lemon zest, parsley, garlic and 2 tablespoons of oil. Set aside.In a large saucepan, melt 1 tablespoon of oil and fry the sausage and until slightly crispy. Add the vegetables and cook stirring for 3-4 minutes.
Pour in the water and bring to a boil. Add the tomatoes, the spring onions and the pasta and cook until the pasta is al dente. Season to taste with salt and pepper.
Ladle the soup into soup bowls, top with a spoonful of the parsley mixture and sprinkle with Parmesan cheese.
